Ingredients:
1 cup rotisserie chicken(125 g), shredded
4 tablespoons BBQ sauce(30 g), divided
1 whole wheat pita bread
1 handful shredded mozzarella cheese
1 handful red onion, sliced
fresh cilantro, for garnish
Directions:
1. Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
2. In a medium bowl, toss the chicken with 2 tablespoons of BBQ sauce until well-coated.
3. Place the pita bread on the prepared baking sheet and spread the remaining 2 tablespoons of BBQ sauce on top. Scatter the chicken over the pita, then top with shredded mozzarella and red onion.
4. Bake for 15-20 minutes, or until the cheese is melted and the chicken is heated through.
5. Garnish with fresh cilantro, then slice and serve.
