Making these crispy Italian cookies is simple, but it does call for some extra care. Two baking processes are used to create biscotti: a log and individual slices.
Ingredients:
One cup of powdered sugar
Half a cup of melted butter
three eggs
One yolk from an egg
A quarter-tsp vanilla extract
Half a cup of all-purpose flour
two tsp powdered baking
Directions:
1. Set oven temperature to 350 F (175 C). Put parchment paper on a baking sheet.
2. In a large bowl, use an electric mixer to beat butter and sugar until light and fluffy. Then, beat in eggs, egg yolk, and vanilla extract. In a bowl, combine flour and baking powder. To make a dough that is fairly sticky, stir the flour mixture into the butter mixture.
3. Split the dough in half, then form each into two loaves, each about 1 inch high in the center, using your wet hands on the baking sheet that has been prepared.
4. Bake for about 20 minutes in a preheated oven, or until lightly browned; remove and let cool completely on a wire rack for another 30 minutes.
5. Using a serrated knife, slice loaves into 1/2-inch slices. Place cookie slices, cut sides up, back onto baking sheet that has been lined.
6. Raise the oven's setting to 450 degrees Fahrenheit (230 degrees Celsius).
7. Bake for 3 to 4 minutes on each side, or until golden brown, in a preheated oven, turning once.
